Chef Scott Baechler is a Chef Professor at The Canadian Food and Wine Institute, based in Niagara-on-the-Lake. Formerly Chef Instructor in the Tourism & Hospitality department at Fanshawe College in London, he is an award-winning chef and a Certified Chef de Cuisine (CCC). With more than 23 years of culinary experience gained from working around the world, he is a member of Culinary Team Canada and has cooked for the rich and famous, including Halle Berry, Queen Elizabeth and Prince Phillip.

PASTA-MAKING TIP:
In order to ensure that sauces stick to the noodles, never add oil to the pasta water. Do use salted water when boiling pasta, though. It raises the water temperature more quickly and adds that pop of salt taste to pasta.
