Spinach Lasagne Noodles
1 jar (700 mL)
Pasta Sauce - your favourite flavour
2 tbsp (30 mL)
onion, finely chopped
1/3 cup (75 mL)
chopped fresh parsley or basil
1 1/2 lbs (750 g)
Ricotta or Cottage cheese
1/3 cup (75 mL)
1/4 cup (50 mL)
shredded Mozzarella cheese or grated Parmesan cheese
Cook lasagne according to package directions. Drain and rinse in cold water to cool.
In saucepan, heat oil; cook garlic, onion, and parsley until tender.
Combine ricotta cheese and onion mixture.
Combine sauce and water.
Spread 1/4 of the sauce mixture in 3.5 L (13 x 9 inches) baking dish. Top with 3 noodles, another 1/4 sauce and 3 more noodles.
Spread cheese mixture over noodles. Top with 3 more noodles and 1/4 sauce; cover with remaining noodles and sauce. Sprinkle top with Mozzarella cheese.
Cover and bake in 180°C (350°F) oven for 30-35 minutes.
Let stand 10 minutes before serving.
