Lemon & Herb Rotini Tuna Salad

Inspired by the classic Parisian Niçoise salad, this fresh combination of tuna, veggies and herbs tastes like summer in a bowl.
Tips Replace tuna with canned chickpeas for a vegan salad.
If making ahead, reserve a little dressing to remoisten salad just before serving.

Ingrédients

  • 1 pkg (300 g)CATELLI SuperGreens™ Rotini
  • 2 cups (500 mL) trimmed and halved green beans
  • 2 tbsp (30 mL) each Dijon mustard and lemon juice
  • 1/4 cup (60 mL) finely chopped fresh herbs such as parsley, chives and tarragon
  • 1/2 tsp (2 mL) each minced garlic and honey
  • 1/4 tsp (1 mL) each salt and pepper
  • 1/4 cup (60 mL) extra virgin olive oil
  • 1 can (170 g) light tuna packed in oil, drained and flaked
  • 1/2 cup (125 mL) each diced tomato and red onion
  • 1/4 cup (60 mL) slivered black olives

Step 1

Prepare fusilli according to package directions. Add green beans during last 4 minutes of cooking. Run under cold water and drain well.

Step 2

Whisk mustard with lemon juice, herbs, garlic, honey, salt, and pepper; whisking, drizzle in olive oil until well blended. Toss fusilli and beans with dressing mixture, tuna, tomato, red onion, and black olives until combined
