Alpha-bitty Veggie Soup
Catelli Classic Alphabets

Ingredients

  • 1 cup (250 mL) Catelli Alphabets
  • 2 tsp (10 mL) vegetable oil
  • 1 small onion, minced
  • 2 tbsp (30 mL) tomato paste
  • 1 tsp (5 mL) dried basil leaves
  • 1 carton (900 mL) chicken or vegetable broth
  • 3 cups (750 mL) water
  • 3 cups (750 mL) frozen diced vegetable blend

Cooking Steps

Step 1

Heat oil in large pot set over medium heat. Add onion and cook, stirring often, for 3 minutes. Stir in tomato paste and basil. Cook, stirring, for 1 minute. Stir in broth and water; bring to a boil.

Step 2

Add uncooked alphabets and vegetables. Cook on medium for 15 minutes or until alphabets are tender. Serve promptly.
