Cooking Steps
Step 1
Cook the pasta according to package directions. Once cooked, drain and lightly coat with oil, gently toss and cool in the fridge.
Step 2
For the hummus, put all ingredients in a blender or food processor and blend until smooth.
Step 3
In a separate bowl, combine all the remaining ingredients(except the black beans and pasta)with the hummus, and mix. Fold the black beans into the hummus, rather than blending them in, to avoid having the colour of the beans spread to the entire dish.
Step 4
Combine this mixture with the cooled pasta and lightly mix until all pasta is coated.
Step 5
Bowl and garnish with chopped bacon and cilantro. Enjoy your pasta!It can be made the day before and refrigerated.
