Rotini Pasta Salad with Spicy Black Bean Hummus

Ingredients

  • 1 pkg (375 g)Catelli® Healthy Harvest® Whole Wheat Rotini
  • 2 tbsp (30 ml) olive or canola oil
  • 3 cups (750 ml) hummus (recipe to follow, or can be bought pre-made)
  • 2 cups (500 ml) light sour cream
  • 2 tbsp (30 ml) taco seasoning
  • 2 cups (350 g) diced tomatoes
  • 1 cup (150 g) diced red onion
  • 1 cup (100 g) grated cheddar cheese
  • 2 tbsp (30 ml) Sriracha (or any preferred hot sauce)
  • 2 cups (500 ml) black beans (rinsed very well,drained and roughly chopped)
  • salt and pepper to taste
  • Hummus
  • 2 cups (500 ml) canned chickpeas, rinsed very well
  • ½ cup (125 ml) tahini paste
  • ¼ cup (60 ml) olive oil
  • 1 ½ tbsp. (20 g) minced garlic
  • juice of 2 lemons
  • salt and pepper to taste
  • Garnish: crispy chopped bacon, cilantro and diced tomatoes

Cooking Steps

Step 1

Cook the pasta according to package directions. Once cooked, drain and lightly coat with oil, gently toss and cool in the fridge.

Step 2

For the hummus, put all ingredients in a blender or food processor and blend until smooth.

Step 3

In a separate bowl, combine all the remaining ingredients(except the black beans and pasta)with the hummus, and mix. Fold the black beans into the hummus, rather than blending them in, to avoid having the colour of the beans spread to the entire dish.

Step 4

Combine this mixture with the cooled pasta and lightly mix until all pasta is coated.

Step 5

Bowl and garnish with chopped bacon and cilantro. Enjoy your pasta!It can be made the day before and refrigerated.
