Sneaky Vegetable Mac n’ Cheese
Confession: I still have to sneak vegetables onto my husband’s plate. Perhaps sneak isn’t the right word, but a little cough clearing at the table and a raised eyebrow towards the night’s vegetable offering typically occurs during dinnertime. He can’t help it - he’s a meat and potatoes man through and through.
However, the one vegetable-filled dish my husband loves is my mother-in-law’s macaroni. It was his childhood staple. He doesn’t have many dishes that he loves this feverently and it’s surprising since it’s full of a nice hidden source of vegetables: tomato/vegetable juice. And what’s great about pairing this dish with Catelli Smart Veggie™ is there is an added benefit of a half serving of veggies too – we’re just upping the veggie count with this recipe! Cooking Steps
Step 1
Cook pasta according to box instructions.
Step 2
In a medium pan, over medium heat, melt butter and whisk in flour.
Step 3
Whisk in milk until it becomes a cream sauce, add tomato or vegetable juice and cheese. Simmer for 5 to 6 minutes.
Step 4
Drain and add cooked pasta to sauce and stir.
Step 5
Bake in oven for 20 to 25 minutes or until top is crisp.
Step 6
Remove from oven, let cool and serve.
